Chicken Pot Pie

Chicken Pot Pie

This is a recipe given to me by a friend. It makes for a very quick weeknight meal. It is one of my husband's very faves! The cool thing is, you can add more or less of anything according to your tastes or the number of people you have to feed and it always turns out great!

2-3 boneless skinless chicken breasts (cubed)
1 tbs. oil
poultry seasonings (I use Lawry's, Head Country)
1 slice minced onion (or use dehydrated onion)
1 package of country gravy mix (or make fresh gravy from butter flour and chicken bullion)
1 small package frozen mixed veggies (green beans, carrots, peas corn)
2 rolls refrigerator biscuits ( or frozen biscuits)

Preaheat oven and prepare biscuits for baking. In a skillet, stir fry chicken, seasonings and onion in oil. Meanwhile make gravy in a saucepan according to package directions (or from scratch). Also while chicken is cooking, heat up veggies in a little bit of water in the microwave then strain of water. Put rolls in the oven. Once the chicken is cooked through, add the gravy, and strained veggies. Stir to mix until hot. Split open or tear up biscuits and spoon over chicken/gravy/veggie mix.

Menu Plan Monday - 11/30/09

Well, Thanksgiving has come and gone. It was a wonderful day spent with those we love the most. Brined the turkey this year. Used Alton Brown's recipe to the "T". Next year, we will brine but then go back to cooking it in the turkey bag too. I think it makes for a more evenly cooked turkey. Plus, that's the way my G-Ma used to do it! :-)

This is my last week of being a SAHM. I plan to make the most of it in getting ready for Christmas and getting the house cleaned and tasks completed. Gotta dig out my work clothes and polish up my shoes. I would also like to buy a couple of new outfits. Last week was way different than the plan, but the plan was a few days late anyway! LOL! So, here we are back on track with the Monday plan ...

TURKEY DAY! Turkey, dressing, relish tray, green bean casserole, corn casserole, broccoli casserole, salad, sweet potatoes, mashed potatoes, baked beans, cheeseball, pumpkin pie, white chocolate mochas and pumpkin spiced coffee. -
Everything except the coffee!

Friday:
Leftovers! - Ate out. (Did have leftovers for lunch though)

Saturday:
Turkey n Noodles w/ Mashed potatoes
- Made turkey enchiladas. They were OK.

Sunday:
Manwich and Velvetta mac n cheese.

Menu Plan Monday - 11/23/09

Better late than never!

This has been a busy, crazy week. Preparing for Thanksgiving and also trying to fit in as much as I can before I start back to work in a couple of weeks! We have mostly been easting leftovers and simple, quick meals. Mostly soft foods because my husband had that surgery on his teeth last Monday.

Menu Plan Monday - 11/16/09

Isn't that a pretty icon for Thanksgiving?!

We just finished up a very busy birthday week and this week will prove to be just as busy as we get started preparing for next week's Thanksgiving Holiday. WE plan to have it at our house with close family and lots of food. It will be my first without my Mom here. That will be hard, but I know she is peeking in on me and helping me! We are going to have baked beans in her honor. She always wanted baked beand on Thanksgiving. (Even though I thought that was weird!)

A New Christmas Tradition!


A few years ago, we got a Hallmark Countdown to Christmas tree for our oldest daughter. We then had to buy one for her sister. Up until this year, we just gave them the ornaments each day to count down ...

Well, this year, I decided to to some activities on each day for the girls (and us) to enjoy!


I am going to write these all out on cards and put them in envelopes with a few puzzle pieces for the girls to open each day of December. I hope they enjoy the new tradition!

Here is the list, not necessarily in the this order:


1 - Decorate Christmas Tree

2 - Give them holiday cups. Found some really cute ones at Walgreens that light up! FUN!

3 - Make cards for teachers/daycare

4 - Camp out in the living room near the Christmas tree.

5 - Pick an Angel off of the Salvation Army Angel tree and shop for a little girl or boy.

6 - Shop as a family for our Christmas ornaments. Carl and I have bought one for us every year us and the girls. Now the girls are big enough they get to pick their own

7 - Daddy to read them a Christmas book.

8 - Music program

9 - Color a picture for Mom and Dad's work

10 - Make snowflake candy necklaces

11 - Build gingerbread houses

12 - Candy making festival with family (An all day and into the late-night affair!

13 - Christmas Caroling with the church

14 - Music Program

15 - Make paper snowflakes

16 - Decorate their bedroom doors

17 - Make red and green bracelets

18 - Camp out in the living room near the Christmas tree. So fun, we're gonna do it again!

19 - Watch Elf and have hot cocoa

20 - Red and Green dinner night

21 - Watch Frosty the Snowman

22 - Christmas Light Limo tour

23 - Make cookies for Santa

24 - Christmas Eve - Church, PJ's get to bed!

25 - Open presents and have a meal and enjoy Christmas music

Menu Plan Monday - 11/9/09

Last week was pretty busy so our menus got all switched around! But, that is pretty normal for our family anyways! :-)

Thank you for the prayers on the job front. I am waiting on paperwork and it is looking positive that I will be headed back to work very soon. Being a working mom forever, I have never worked and planned menus at the same time! So, I'm sure my new habit will be great for those busy work nights.

Carl was out fishing me and the girls had sandwiches. He came home and made Hamburger Italiano (Baked goulash) at about 9pm. It was good!

KC Strip, Velveeta Mac n cheese, fried potatoes, veggie - Carl made steak kabobs with rice, green beans and mini baked potatoes. (quartered, sliced and microwaved with a little water and butter).

First Menu for November. WOW, this year is just flying by! It's pretty much non-stop for our family from now until almost March! It all starts with Halloween ... Then Lauren's birthday, Thanksgiving, Candy making festival, Christmas, New Years, Superbowl, Lindsey's birthday and Valentines day ... Hold on! Here we goooooo!

Menu Plan Monday - 10/26/09

After spending last weekend with friends in a cabin, this week we have all been recovering from colds, fever and other yuck! So, next time we will get together well in advance of cold/flu season!

Pumpkin carving yesterday was fabulous! Chili and French Onion soup were prefect! (Carl made me carmelize the onions outside on the grill burner so it wouldn't make the house stink! LOL!)
Hopefully, the sickies are over and next week, I may be headed back to work! I will know more on Thursday. :-)

Friday: From the Freezer: Mom's stew. This is the last stew Mom made last winter. Bittersweet to eat it because it is the last she made for me before she passed away. - Since everyone still had stuffy noses, I want to wait to eat this when we can taste it. Instead we had snacks for supper.

Saturday: Sandwiches then a Halloween Party! - Tortilla roll-ups and oatmeal scotchie cookies. After the party, we went to Red Robin.

Sunday: Pumkin carving party! Chili with all the fixins and frend onion soup. - Yummy and oh, so FUN!


So, next week, my menus may drastically change. When I go back to work, I will need menu planning more than ever!!!

Menu Plan Monday - 10/19/09 - A Little Late!

The cabin weekend was great!!! The weather was a little cold but warmed up nicely the day we left! LOL!



The leaves were changing and falling. It was beautiful! The best things was spending time with our very good friends and their children.

We took pantry staples like spices and such, but bought everything perishable when we got there. The shopping trip was fun and we had a list so we only over bought on just a couple of splurge items. We were blessed and ate very well for the weekend!


We returned late on Monday and it's taken me a couple of days to catch up. Here's this weeks Menu Plan Monday on a Thursday! LOL!!!

Menu Plan Monday - 10/12/09

We've got a busy week coming up! We are headed to a cabin on a nice lake to spend the weekend with some excellent friends! Had a quick conversation with my friend about what to eat while we are there. We have to take all of the food so we're trying to keep it simple!

I substituted a lot this week, because our week changed around a lot, but I'm finding that is normal for us! LOL

Monday: Baked Chicken Chimichangas (Taste of Home Cookbook Pg 174)-(Recycled from last week).

Tuesday: Meatloaf with Mashed Potatoes, Corn and Rolls

Wednesday: Yakatori Chicken with rice and Egg Drop Soup (Recycled from last week).

Thursday: Flat iron Steak Fajitas w/ Mexican rice (Recycled from last week).

Friday: Chili (At the Cabin)

Saturday: Fish Fry - Hopefully! (At the Cabin)

Sunday: Grilled burgers and dogs.


HOW WE DID LAST WEEK of 10/5/09:


Monday: Leftovers because Moma has a meeting! This worked great. Kids also had Spaghetti O's and Raviolis. No cookin' for me!

Tuesday: Grilled Steak Kabobs (Outback seasoned)-Potato, veggie, mac n cheese (Recycled from last week). - Made it and ate it. Steak was GREAT! Instead of mac n cheese, I made a new Risotto recipe that used squash and peppers from the garden. It was ok. Not our new fave, but OK.

Wednesday: Cracker Crust Chicken, mashed potato, corn, gravy, bread (Recycled from last week). Got around really late so I just made fast Hamburger Rice.

Thursday: Flank Steak Fajitas w/ mexican rice (Recycled from last week). - Went to get my hair done in the late afternoon and then took my sister-in-law to Pizza Hut for keeping the girls for me.

Friday: Yakatori Chicken with rice and Egg Drop Soup - Weird night. The kids ate snacks late that kinda doubled for supper. Husband and I both had big, late lunches so we just didn't need supper. Kids ate some Chocolate Malt o Meal for a snack at about 8pm. LOL!

Saturday: Eating out. Moma's going scrappin' !!! - Did this. It was awesome!

Sunday: Baked Chicken Chimichangas (Taste of Home Pg 174) (Recycled from last week). - Really felt like potato soup. So that's what I made! LOL!



The weeks are getting busier and the nights are getting colder. I am fighting the urge to turn on the furnace. Trying to hold off a little longer!!!

Thursday: Cracker Crust Chicken, mashed potato, corn, gravy, bread - Pepper steak at family's request.

Friday: Family party at a friend's house. I will take Tortilla roll-ups and Oatmeal No-Bake Cookies. - Did this. It was yummy. Party was a blast!

Saturday: Flank Steak Fajitas w/ mexican rice - Out to eat at Logan's

Sunday: Baked Chicken Chimichangas (Taste of Home Pg 174) - Ended up making baked spaghetti. The other night I accidentally opened a can of ITALIAN stewed tomatoes instead of DICED tomatoes. I saved them and used them tonight and made a meal around them so they wouldn't be wasted!

So ... I am still impressed with this whole menu planning thing. I think the most amazing thing is that I find myself throwing away much less food than I did before. It seems we are able to get things used up BEFORE they go bad. That is good!

Wednesday: NEW RECIPE - (Recycled from last 2 weeks) Stuffed Chicken Rolls with Gravy from Miss Vickie's pressure cooker cookbook. Page 236. Gonna keep this on the menu until we give it a try! Ended up eating out at a local restaurant.

Thursday: NEW RECIPE - Yakatori (marinated, grilled sirloin steak kabobs), oriental green beans, egg drop soup and rice. (Recipes from allrecipes.com and cooks.com) - Swapped Thursday and Friday of this week. Pizza was good as usual!

Friday: Home made pizza - C'Mon garden! One more round of green peppers and tomatoes! Please?!? - Ok so tonight was the night to try the recipes listed for Thursday above. WOWEE!!! This was gooooood! Found out it is really called Yakiniku (Grilled Beef). Yakatori is chicken. Anyway it was amazingly good!!!

Saturday: Cracker Crust Chicken, mashed potatoes, gravy, corn. - Had quick spaghetti with meat sauce and bread.

Sunday: Beef and noodles with mashed potaotes (slow cook roast starting in the morning). - Got stuck out at the lake ... LITERALLY! So we ate a Pizza Hut on the way home. Very late! LOL!

Thursday: NEW RECIPE - Yakatori (marinated, grilled sirloin steak kabobs), oriental green beans, egg drop soup and rice. (Recipes from allrecipes.com and cooks.com)

Friday: Home made pizza - C'Mon garden! One more round of green peppers and tomatoes! Please?!?

Saturday: Cracker Crust Chicken, mashed potatoes, gravy, corn.

Sunday: Beef and noodles with mashed potaotes (slow cook roast starting in the morning).


HOW WE DID LAST WEEK of 9/7/09:
Monday: Tacos - Planned it, made em. Ate 'em! With fresh salsa to boot!

Tuesday: NEW RECIPE - Grilled steaks, fried potatoes, velveeta mac n cheese, green beans. I used the Outback Steakhouse marinade from a copycat recipe book. It was wayyyyyy yummy!

Wednesday: Spaghetti & Meatballs with french bread - Littlest daughter thought Pepper Steak sounded better. So that's what we did (pulled from Sunday)! Took the opportunity to let the girls help measure chop (w/supervision) and stir. They were very proud of supper that night and ate really well!

Thursday: Chicken Enchiladas - These turned out yummy, even though I left the oven on BROIL!!! (I turn it onto that to preheat and forgot to switch it down! ACK!!) Thank gooness the rack was low enough, just the cheese got crispy, just the way I like it! These rock! Especially the next day for lunch!

Friday: Chicken fried rice and crab rangoon - Ended up out shopping. Suprised the girls and took them out to Red Robin. Sat on the patio. It was wonderful! I had a chicken apple salad with goat cheese and walnuts. Amazing how sitting outside, you can taste everthing totallyy seperate really strong. It was cool!

Saturday: NEW RECIPE - (Recycled from last week) Stuffed Chicken Rolls with Gravy from Miss Vickie's pressure cooker cookbook. Page 236. Gonna give this one a try! - Went out to see "Cloudy with a chance of Meatballs" Ate real quick at a local burger place.

Sunday: (Recycled from last week)Pepper Steak - Once of our faves this summer because it's easy and our garden is still crankin out the peppers! - Celebrated my birthday with some friends that invited us to their house for dinner. Good times!

Menu Plan Monday - SIX WEEKS! 9/14/09

I would say we have a habit here with this menu planning thing! Whoo hoo!

So, last week. I committed to making at least ONE NEW MEAL each week. Even though we flip flopped some meals this past week, I plan to pick up with this again this week.

HOW WE DID LAST WEEK of 9/7/09:
Monday: Labor Day - Back home from Camping @ the lake late - Ate at the Marina

Tuesday: Grilled hamburgers and french fries. Need to use lefteover thawed hamburger patties from the lake. I also will pre-cook some of it to make nachos later this week out of the extra pound of patties I thawed so they won't go to waste. - Ended up making Hamburger Helper. Husband had already ate. Kids and I really like HB Helper. :-)

Wednesday: Cracker Crust Chicken with red potatoes in gravy and peas - I just use crushed saltines (with some seasoned salt) to coat chicken cubes that have been dipped in egg and then fry them. (This is the third week of this being on the menu. If we don't cook it this week, I'm taking it off the menu for a while!) - Cooked it and we ate it. Made regular mashed potatoes and corn adn some really great homemade gravy. Gotta put this back on the menu everyone really liked it. (Leftovers were great the next day too!)

Thursday: Home made pizza. Still have alot of good peppers from the garden. Plus, I bought pepperoni on sale for camping (to make pizza pockets over the campfire. SEE NOTE BELOW). We didn't end up using it so, Home made pizza sounds good! - Husband brought home pizza in honor of NFL opening night. OK by me!!! LOL!

Friday: Baked nachos using fresh salsa I'm gonna make this week and the ground beef I cooked on Tuesday night. Didn't make salsa. Ended up going out to dinner with husband, kids and sister-in-law.

Saturday: NEW RECIPE - Stuffed Chicken Rolls with Gravy from Miss Vickie's pressure cooker cookbook. Page 236. Gonna give this one a try! - Didn't end up making this so it's on the menu for this week. (See above). We had some good friend's kids over and my oldest daughter requested that I make homemade chicken and noodles with mashed potatoes. We had this several weeks ago and everyone chowed down. If that meal pleases FOUR finicky kids, yes dear, I will make that! ;-)

Sunday: Pepper Steak - Once of our faves this summer because it's easy and our garden is still crankin out the peppers! - Had friends over so we ended up having home made pizzas that were planned for Thursday.

Menu Plan Monday - Week of 9/7/09 - 5th Week! A habit for sure!

So, I am still diggin' on the Menu Planning. Not quite sure why it's working, but I am soooooo glad it is! :-)

I also have a new goal, I'd like to share with you ... If your family is like ours, you have about 10 standby meals that you know everyone will eat and you just make the heck out of them til everyone is just SICK of eating the same old thing all the time! Well, to help combat dinner boredom, I committed to making at least ONE NEW MEAL each week from my many cook books or the unlimited resources on the internet. Of course I know what they may eat and not eat so I use that as a guide. But I'm also not afraid to push the limit of their picky little tastebuds either! LOL!!! So, here's to my new cooking adventures! I will let you know the source of my family's new eating adventures! ;-)

HOW WE DID LAST WEEK of 8/17/09:
Monday: NEW RECIPE REPORT- Baked Chicken Chimichangas - Taste of Home Cookbook. Page 174 - Ok, this was something totally new ... And it ROCKED!!! This recipe is worth the price of the entire cookbook. Seriously! Can't believe the chimichangas got crunchy just from being in the oven. This is on my list of stuff to make again.

Tuesday: Spaghetti with italian meatballs and french bread - Made it. Ate it. Family was happy. We hadn't had this for a while because all were burned out on it before. Made the meatballs with a little garlic powder. Carl liked them. (He's usually anti-garlic)

Wednesday: Flank Steak Fajitas - Made them, ate them. Used fresh salsa. Yummo!

Thursday: Cracker Crust Chicken with red potatoes in gravy and peas - What is up with this chicken? Each night I plan to cook it, we are busy out shopping ... Used an email coupon for Carlos o' Kellys and saved a little $$ since we ate out.

Friday: Camping - Eat out on the way there - Pizza Hut according to plan. Called in the order so it was ready when we got there. Wanted to get back on the road FAST! LOL

Saturday: Camp out - Burgers and Dogs grilled - Campfire corn on the cob, chips Dip -Wellllll ... Here's where we get creative! I love camp cooking. It's always a challenge. You have to plan every single meal. There isn't any running to the pantry for cereal and milk ... Unless you PLAN it like that! LOL! So, I ended up with a grat deal on frozen sirloin steak kabobs and tons of fresh veggies from the garden so we took metal skewers camping and grilled marinated steak kabobs. I also took a bunch of corn on the cob (also on sale!) and pulled back the husks, cleaned out the silk, buttered, salted and pulled the husks back up and covered them in foil and then grilled the corn over the campfire. You have to remember to turn them frequently so they don't burn, but they are soooooooo good!

Sunday - Camp out - Burgers and Dogs grilled - Campfire corn on the cob, chips Dip - This we did except we ate the corn a night early. On this night, we did the baked potatoes the same as the corn. (Baked potatoes take longer though! Start them early).

Monday (Labor Day): Back Home Something easy. We stayed at the lake really late so we just took the boat to the Marina and ate supper there. It was REALLY GOOD and not as expensive as I would have thought. Now, the marina grill is closed until next Memorial day, but it was really cool!

NEW IDEA!!! Camp cooking is so fun. I also want to reccommend these little camnpfire irons you can put bread (or anything) into and close them up and grill them over the campfire. Talk about YUM!!! We took sweet stuff to make apple pies (fresh apples, cinnamon and sugar) but we just didn't get to it. We did have grilled ham and cheese one day for lunch and the next morning, grilled bacon egg and cheese sandwiches. They are very cool!

What a fun week made much less hectic by our menu planning! YAY!

Menu Plan Monday - 4th Week! 8/31/09

Well, last week, I planned the menus and we switched around a lot! I managed to try one new pressure cooker recipe too. This week will be a busy week since we are going camping for the holiday weekend. Check on orgjunkie.com to see more Menu Plan Monday followers.

Monday: New Recipe - Baked Chicken Chimichangas - Taste of Home Cookbook. Page 174 (Didn't get to make these last week. Making fresh salsa this afternoon so we'll give it a try!)

Tuesday: Spaghetti with italian meatballs and french bread. (Didn't get to make this last week)

Wednesday: Flank Steak Fajitas - Gotta use that salsa! :-)

Monday (Labor Day): Back Home Something easy. (Raviolis & Spaghettios and lake leftovers.) I went ahead and planned this day too since we will just be getting home.


HOW WE DID LAST WEEK of 8/17/09:
Monday: Pepper Steak - Got busy this night so we ate Spaghettios and Raviolis.
Tuesday: BLT's - These didn't sound good, so I made the new pressure cooker recipe for Monster Meatballs. Family liked the meatballs and the potatoes but not the gravy. Said next time put marinara sauce on the meatballs. Maybe smaller and on french bread for a sandwich.
Wednesday: Monster Meatballs. - Made this Tuesday instead. Tonight I made Pepper steak that we were supposed to have on Monday.
Thursday: Cracker Crust Chicken with red potatoes in gravy and peas - Busy out shopping, so I used a gift card to a fast food restaurant I had.
Friday: Baked Chicken Chimichangas - Another busy night so we did Leftovers and raviolis.
Saturday: Spaghetti with italian meatballs and french bread. - Suprise! we went camping! SO we grilled burgers and hot dogs and had chips and dip with them
Sunday: Tacos with cheese dip and tortilla chips. - On our way home from camping we stopped to eat at Pizza Hut.

We only ate two things off of the menu this week and I switched around days on them. LOL! THIS, is a typical week for us. He he! So, I planned another week. We'll see how it goes. Either way, I'm still ahead cause it's just now midday and I KNOW what's for dinner! YAY!

Menu Plan Monday (3rd week! On a roll!)- 08/24/09

A new routine?!? I am really loving planning the menus for our week. I couldn't ever do it before! For some reason what I found on orgjunkie.com clicks for me and is working!!!

My second week was great. I did switch around alot last week with the days of the week, but for the most part it worked really well. It was awesome knowing what was for supper! (See below for what last week was and what we actually did for supper).

So, here is this week's version for 8/24/09:

Monday: Eating dinner at school function.

Tuesday: BLT's - Our tomatoes have finally begun to turn red. We must take advantage of them for Bacon, Lettuce and Tomato sandwiches! We will have Kraft mac n cheese or chips with them. Plus cucumbers maybe some squash cooked with some pesto a friend made.

Wednesday: New Pressure Cooker Recipe - Monster Meatballs with "Baked" Potatoes. From Miss Vickie's Pressure Cooker Book Page 174.

Thursday: Cracker Crust Chicken with red potatoes in gravy and peas - I just use crushed saltines (with some seasoned salt) to coat chicken cubes that have been dipped in egg and then fry them.

Friday: New Recipe - Baked Chicken Chimichangas - Tast of Home Cookbook. Page 174 (What's up with that? Page 174 again! LOL!)

Saturday: Spaghetti with italian meatballs and french bread.

Sunday: Tacos with cheese dip and tortilla chips. I make the taco meat with ground beef and Tone's taco seasoning from Sam's. The cheese dip is On The Border dip also from Sam's.

HOW WE DID LAST WEEK of 8/17/09:
Monday: Fajitas made with flank steak - Made them, ate them!
Tuesday: Sweet n sour chicken - I'm taking this off the menu for a while. It just isn't sounding good to us! So, we ate the Chicken Pot Pie I had planned for Thursday. (Made the gravy on my own though instead of from a packet this time).
Wednesday: Meatloaf, mashed potatoes, corn and rolls. - My sister in law came over with two roasted chickens and all the fixins ... So no cooking for me! Yay! Plus we had a chicken left over. I froze it to use on Sunday when she comes over again.
Thursday: Chicken Pot Pie - We ate this on Tuesday. Instead we had Chicken Enchiladas I had planned for Saturday night.
Friday: Manwich on buns, homemade Velveeta mac n cheese, cucumber salad and green beans. - Had some time today so I made Meatloaf, mashed potatoes, corn and rolls that we were supposed to have Wednesday. I also tried a new yeast roll recipe I found on Allrecipes.com
Saturday: Chicken Enchiladas - Ate the Manwich on buns, homemade Velveeta mac n cheese, cucumber salad that we had planned for Friday night.
Sunday: Grilled house burgers with home cut french fries and breaded squash. - We used the other chicken my Sister-in-law brought over on Wedensday and made some homemade chicken noodles and mashed potatoes. Had friends over and they brought a wonderful angelfood cake dessert with coolwhip, pudding, pineapple and strawberry frosting. Yummo!

So even though I jumbled it all around, we stuck pretty much to the plans only bumping off things to make way for what my sister-in-law brought over. She can do that anytime! It's fine by me! LOL!

Here's to another week of menu plans! Yay!

One year ago vs. Today

My oldest DD went back to school as a first grader today. It was much easier to walk her in this year. No tears from me. (Unlike last year I bawled like a baby as I drove away from the school!) My husband and younger daughter also went with us. (See photo to the left).
It was sweet to watch the Moms of the new little kindergartners be in the same place I was just one short year ago.
It's amazing how much the kids grow in one year. Last year they were all so small. Another Mom commented on how much bigger the class size looked this year. When I counted kids, the number was exactly the same as last year, just the kids are bigger! LOL!
My daughter loves school and couldn't wait to go back. She got in line and I had turned to chat with another parent and hardly noticed that her line was leaving for class! I had to call her name to get her attention to wave goodbye. It was funny. I am sooooo glad she isn't the clingy, crying type, but she was ready to go without so much as a wave bye! (I'm a Mom, I need a little bitty-eentsy-teensy bit of separation anxiety from her to feel appreciated! At least an extra hug or something! LOL!!!)

After school we checked out her class room. Nice, neat, clean and super organized!

The main thing I noticed about 1st grade vs. kindergarten was the lack of toys in the class room. For kindergarten, there were plenty of "centers" for play during free time. They rotated amongst learning game, and building blocks and a play area called housekeeping.

No toys in first grade. Lots of cool, cute, bright graphics on the walls all geared towards learning. There was a schedule written on the board and so many things on the walls to learn about. I'm pretty sure DD didn't notice the lack of toys. She loves school and learning. Today they counted and graphed M&Ms. Then, they got to eat them! Much better than toys and they were learning math at the same time! LOL!

This year they sit at little desks with cubbies in them to keep their stuff. Last year, they sat at tables with all the other kids. It was so cute to see her in her little desk with her pencil sharpened ready for the next day's work. (All the desks had a sharpened pencil on them!)

I sure hope some of this teacher's organizational strengths rub off on me this year. Lord knows I could really use it!

So, DD is now a first grader and still loves school. That hasn't changed!

Menu Plan Monday (second week!)- 08/17/09

Last week I started planning menus (finally!) because of an idea I found on orgjunkie.com.

Last week it worked really well. (See below for what last week was and what we actually did for supper).



So, here is this week's version:

Monday: Fajitas made with flank steak - I pre-slice the meat into 1/4 pieces almost all the way through before I marinate and grill it. Once it's cooked, I finish slicing it on a cutting board before we make the fajitas buffet style. (I just use McCormick's fajita spice packet but I mix it with a little water and use it as a marinade and then grill it outside. Make sure to get it down inside the cut meat grooves to marinate). I plan to make some fresh salsa from our garden. We have the meat, salsa, lettuce, sour cream and cheese on fresh tortillas. YUM!

Tuesday: Sweet n sour chicken - Had planned to make this last week (see last week for recipe). The ingerdients are easy to always keep on hand since they are pantry items.

Wednesday: Meatloaf, mashed potatoes, corn and rolls. One of my husband's favorite meals.

Thursday: Chicken Pot Pie - Got this recipe from a good friend and it is super easy and DH loves it too. 2 chicken breasts (cubed), seasoned add chopped onion to tasted and cooked til chicken is done and browned in oil. Drain. While chicken is cooking make 1 package of country style gravy to package directions. Thaw out 2 cups of frozen mixed veggies (corn, peas, carrots, green beans, lima beans). Mix together chicken, gravy and veggies and heat up. Pour over fresh baked biscuits.

Friday: Manwich on buns, homemade Velveeta mac n cheese, cucumber salad and green beans.

Saturday: Chicken Enchiladas. Cube a couple of chicken breasts and cook in oil til brown, drain on paper towels. Shred with forks and return to pan. Add taco seasoning to taste. (I use Tone's taco seasoning from Sams and follow package directions for 1lb of hamburger). Put meat on tortilla add some shredded cheddar cheese and 1 spoonful of Old ElPaso enchilada sauce. Roll up and place open side down in glass baking dish. Repeat til all chicken is used and dish is full. Pour over remaining sauce and top with more shredded cheese. Bake according to instructions on can of enchilada sauce. Serve with Vigo Mexican Rice. (In an orange package with the authentic Mexican food).

Sunday: Grilled house burgers with home cut french fries and breaded squash. DH's burger recipe of ground beef, sausage, green peppers and onions. Breading for squash is made with flour and Paul Prudhomme's Magic Salmon seasoning. Dip squash in egg then in flour mix and deep fry.

HOW WE DID LAST WEEK of 8/10/09:
Monday: Hamburger Rice - Cooked it, ate it.
Tuesday: Homemade Veggie Pizza - Cooked it, ate it.
Wednesday: Sweet n sour chicken - We had company over this night, so we made the Sirloin Steak dinner we had planned for Sunday night.
Thursday: Ham and Turkey Sub sandwiches with provolone cheese and chips. - It was a very busy evening and we were not home, so we ate out. (Whoops!)
Friday: We will be traveling this evening so we will stop to eat out. - We did this according to plan.
Saturday: Fish Fry - YES! My DH did catch fish for us to eat! Soooo yummy! (We even brought some home to freeze for later!
Sunday: Sirloin Steaks grilled outside, fried potatoes, Velveeta mac n cheese and corn. - We had this on Wednesday (see above) but we got home from the lake late enough that we just ended up having grilled cheese sandwiches and tomato soup.

Not too bad for our first week!

My First - Menu Plan Monday - 08/10/09

Keeping with the theme of trying new things ... I found this great idea on orgjunkie.com!

Hopefully planning a menu for the week will help us use what we have on hand and help me save $$ shopping. I've always wanted to do this, but got stumped along the way. On Laura's weekly post, you will find links to others that participate in Menu Plan Monday. I'm thinking it is a great place to get ideas from real ladies that also have the quest to put good food on the table for their family.

Here goes:

Monday:
Hamburger Rice - Chili seasoned hamburger with stewed tomatoes, rice and Velveeta cheese over Doritoes. YUM!

Tuesday:
Homemade Veggie Pizza - This is to use up veggies from the garden. We grow it, it goes on the pizza! I use refrigerated pizza crust with Ragu spaghetti sauce and mozzarella cheese of course!

Wednesday:
Sweet n sour chicken - Haven't had this for a while. It is easy to keep the ingredients on hand. Frozen chicken breasts coated in a cornstarch soy sauce mix and stir fried. Add in Kraft sweet and sour sauce and 1 can of pineapple chunks drained. (Save the juice and let the kids sip it for a sweet treat!) We eat this over jasmine rice (or minute rice if we are in a hurry) cooked in chicken bullion.

Thursday:
Ham and Turkey Sub sandwiches with provolone cheese and chips. - A busy evening so something easy it is!

Friday:
We will be traveling this evening so we will stop to eat out.

Saturday:
Fish Fry - Hopefully! Keep your fingers crossed the fish are biting on Saturday morning!

Sunday:
Sirloin Steaks grilled outside, fried potatoes, Velveeta mac n cheese and corn.

For this week's menu, I only need to buy milk! (If only it was this easy every week!) LOL!

Unorganized Camping - Still Fun!

This past weekend, we went with some of our best friends to a nice lake a couple hours' drive from where we live. We planned it at the beginning of the week and found ourselves cramming to get ready on Thursday and Friday. Cramming always means packing/buying more than what you need to do in a last-minute effort not to forget anything ... Then what happens? You forget something really necessary!

So, the night before our trip my girlfriend and I made our lists and went shopping, were out really late but got lots done. Who knew that camping for the first time as adults with children would be so much work to get ready for??? (All of our families camped when we were younger, we just hadn't been as adults with our own little ones).

Friday, I found myself running around purchasing last minute things we HAD to have and ended up tossing things into boxes thinking, 'I can sort that out later once we get to the lake, but at least I will have it'. We ended up leaving 2 hours later than we anticipated and had to stop to eat as a group so we finally pulled into our reserved campsite at 10:05pm. Then we had to pitch tents and make a homestead in the dark from all of our stuff we had tossed into the van to 'sort out LATER'! ACK!

Of course I purchased, but forgot to put on my list a very important item ... the coffee percolator! That set the tone for the next few hours for me and I was in a really bad mood towards myself and I managed to make everyone else in my family grumpy in the process. Once I let that go (and apologized profusely), we had a really good time!

We ended up having everything we really needed except the coffee maker and salt and pepper.

Got some great ideas of what we brought that was really not needed ... board games, extra shoes (we took like three pairs each!) Got some good ideas of how to pare stuff down. We don't need to take as many snacks and food for just a weekend! I brought a whole gallon of milk! We almost don't drink that in a whole week. Not sure why I was thinking we would use all that with an endless supply of juice-boxes and kool-aid, the kids would drink so much milk! LOL!

I also brought 500 paper plates, napkins and forks. Guess I thought we should supply the north side of the lake!

Once I got my boxes of supplies in order, I noticed that I could tell someone where to find something instead of ME digging through stuff endlessly. That helped a lot because the first night and morning we were there, it felt as if that was all I was doing.

So, overall, I think the trip was a great success! We came home with all the kids and only minor scrapes and one fire-ant bite. We slept under the stars and a beautiful, bright moon. We saw a shooting star Friday night. It was a tad windy, but kept the heat bearable and we didn't have to use bug repellent at all!

I loved cooking outside on the campfire and being "unplugged" for a while.

I caught myself wondering what time it was on Saturday ... I decided to give that up and just enjoy the day, knowing we would eat when we were hungry and go to sleep when we were tired. Ahhhhhh, much more enjoyable than watching a clock.

It was fun watching our kids camp for the first time. The first night and morning, they were a little confused, just like us, still trying to figure out what camping was all about. They were relentless that first night with requests as we were trying to sort out where that bag of tent stakes went to! On Saturday night, they were so tired from a full day of camping, boating (thanks to another great friend), swimming and total fun, they ASKED to go to bed and were asleep when I got back to the tent while bringing them the night-time token "drink of water"! LOL!

By Sunday, they were acclimated and played the entire morning on their own, thinking up games and entertaining themselves with piles of dirt and discovering bugs. (See note about the fire-ant bite above!)

I was excited we actually made the decision to go camping. In year's past we would have been so overwhelmed by the whole thing we wouldn't have gone. Once we get even more organized, we will be able to "do" a lot more enjoyable things!

Well, now that we we had a chance to nap (and plug back into the Internet) we're gonna unload the van and get stuff put away and some things organized for next time. We brainstormed all the way home about how plan better for the next trip so we will be able to stress less about the "stuff" and have more time to play!

Here's to trying new things!

I love to learn and try things new. So, here goes a blog.

After losing my job last spring and dealing with the death of my Mother, I find myself in a whole new place with lots of decisions to make. We all have plenty of practice making small decisions every day. Like, coffee or tea? Brown shirt or green? It's the BIG ones that throw us for a loop. I have a lot of them in front of me and I'm working on them.

Here's a little about me:

I have an awesome husband, Carl. We have been together for over 20 years! He is the love of my life and is truly my strength. We have two wonderful, spunky, ornery daughters; Lauren and Lindsey. We love them with all of our hearts ... Even as they are learning new ways to challenge us as parents every single day! (Did I mention they are ornery?!)

I am a clutter-bug and have tried many things to get organized and get my and my family's stuff together. All of it. And keep it together! I love FlyLady but after seven years, I'm still not there. So, I prayed the other day for help getting things together. I mean, really prayed hard. Yesterday, on a bulletin board I frequent, someone mentioned a book called Getting Things Done by David Allen.

I had seen the book before and didn't think it was for me, but this time when God showed me again, I was ready. (Prayer answered!) I Googled it and found the author's website and spent most of yesterday learning. I bought the book yesterday afternoon. It was only $16. If this is to be my solution, it will be a well spent $16.

So far, the system seems very good for me and what I gravitate to: Lists, getting it all down, systems, reminders. Stuff I already know, but it's in one big pile in my head, kinda like the pile in my craft room! LOL!

The book is showing me how to get things out of my head, into a system and organized so I can process them and get them done.

Once I get my stuff together and our lives organized, I will have more time for things I love to do, like; crafts, sewing (especially for my kids), scrap booking (digital and traditional), helping other people, fixing stuff, cooking and trying new recipes. Heck, I may even have time to get some laundry done! LOL!

Some things I am working on right now are: Dresses for the girls for back-to-school. Working on my household routines-cleaning, bill paying, menu planning, grocery shopping, saving money, cleaning closets, etc!

I have been blessed with an awesome supportive family and great friends.

I want my home to be nice for my family. I want to be organized so I will have more time to spend with family and friends instead of looking for misplaced junk.


There! How is that for a goal? Whew, I have a lot of work to do. I'd better get started!
